Ingredients for Taco Base
• Bajra Aanta (pearl millet) — 1 cup
• Wheat Flour — 1/4th cup
• Palak ( Spinach ) — 250 gram
Ingredients for Peanut Butter Sauce
• Peanut Butter — 1 tablespoon
• Schezwan Sauce — 1 Tablespoon
• Soya Sauce — 1/2Tablespoon
• Lemon Juice — 1/2 Tablespoon
• Salt. — 1 pinch or As per taste
Ingredients For Salsa
• Sprouts — 1 cup / 25 gram
• Half cut cucumber –chopped into strips
• Bellpepper ( Yellow , Red and Green) — 1 Each
• Salt — As per Taste
• Maynonnaise. — 2 Tablespoon
• Mixed Herbs. — 1/2 Tablespoon
• Chilli Flakes — 1/2 Tablespoon
Ingredients For Pickled Onion
• Medium Sized Onion. — 1
• Chilli Powder. — 1/2 Tablespoon
• Vinegar. — 3 Tablespoon
Ingredients For Makhni
• Tomato. — 250 Gram
• Medium Sized Onion. — 2
• Garlic. — 4 to 5 cloves
• Ginger. — 1 inch
• Green Chilli. — 2 slit
• Cashew / Kaju. — 15 pieces
• Tez Patta ( Bay Leaf). — 1
• Badi elaichi ( Large Cardamom) — 1
• Choti elaichi (Small Cardamom) — 2
• Laung (cloves). — 3-4
• Daarcheeni (cinnamon) — 2 inch
• Kasuri Methi(Dried Fenugreek) —1Tbs
Ingredients For Filling
(Green , Yellow and Red — 1 Each
• Medium Sized Onion. — 1
• Sweet Corn. — 1 cup
• Mushroom. — 100 gram
• Butter. — 2 Tablespoon
• Green Chilli — 2
• Garlic. — 5 Cloves
• Salt. — As per Taste
Method Of Preparation
Method or Steps To Prepare Taco Dough
Step 1: Make a paste of blanched spinach
Step 2: Now grind the seperated spinach and
make it’s paste.
Step 3: Take Bajra Aanta and Wheat Flour in
a bowl mix it with 2 tablespoon of ghee or 2 tablespoon of refined oil and 1/2 tablespoon salt and lastly add palak paste.
Step 4: Mix it all together and make a dough
( If you want you can use lukewarm water to make the dough ).
Steps To prepare Peanut Sauce
Step 1: Now take a bowl and mix all the above mentioned ingredients for peanut sauce in their given quantity.
Steps To prepare Salsa
Step 1: Now take another bowl , chop all the mentioned vegetables mix it with the given masalas and mayonnaise in their given quantity.
Steps To Prepare Pickled Onion
Step 1: Round sized onion soaked in vinegar and chilli powder.
Steps To Prepare Makhni
Step 1: First chop all the mentioned vegetables. Take a saucepan add 1&1/2 cup of water , add all the ingredients mentioned above for makhni. Now turn on the gas wait for the ingredients to boil. Now lower the flame and cook it for 25 minutes.
Step 2: After 25 minutes turn off the gas and let the makhni cool down for some minutes.
Step 3: Now grind the makhni in a mixer and make it’s paste and strain the paste in a bowl.
Steps To Prepare Filling For Tacos
Step 1: Cut down all thr mentioned vegetables for filling.
Step 2: Now take a pan and add 2 tablespoon butter. Now add finely chopped garlic and green chilli. Now saute it for 1&1/2 minutes.
Step 3: Now add all the chopped vegetables in the pan. Add salt as per the taste & let it cook for 5 minutes. ( Do not overcook the vegetables).
Step 4: Now after 5 minutes add the makhni paste and cook until the whole gravy is dried.
Step 5: Now take some kasuri methi mash it by your palm and add it to the dried gravy. Lastly add grated paneer on top of the gravy and give it a stir.
Step 6: Lastly make crispy chapattis out of the dough and arrange all the prepared filling in the chapatti according to your taste and give it a fold.
( For instance I have arranged my tacos like first put lettuce on the taco then add a full spoon of filling then add salsa and pickled onion on above of it , finally drizzle the peanut butter sauce and fold the taco. Your Bajra Makhni Tacos and Peanut Butter Tango is ready to serve.
